Chilli Lime Black Beans
Ingredients
- 2 tablespoons Olive Oil
- 1 Onion, finely diced
- 3 Garlic Cloves, minced
- 1 Red Chilli, finely sliced
- 15g Fresh Ginger, cut into thin matchsticks
- 2 × 400g Cans Black Beans, drained and rinsed
- 200ml Coconut Cream
- 100ml Vegetable Stock
- 1 teaspoon Ground Cumin
- 1 teaspoon Smoked Paprika
- 1 Lime, zest and juice
- Fresh Coriander, chopped
- Salt and Black Pepper, to taste
Instructions
- Heat 1 tablespoon of olive oil in a saucepan over medium heat. Cook the onion until softened, about 5 minutes.
- Add the garlic, chilli, ground cumin and smoked paprika, then cook for 1 minute until fragrant.
- Stir in the black beans, coconut cream and vegetable stock.
- Simmer gently for 10–12 minutes, stirring occasionally, until the sauce has thickened slightly.
- Meanwhile, heat the remaining olive oil in a small frying pan and fry the ginger until golden and crisp. Transfer to kitchen paper to drain.
- Stir the lime zest and most of the lime juice into the beans.
- Season with salt and black pepper to taste.
- Spoon into serving bowls and top with the crispy ginger and fresh coriander.
- Finish with the remaining lime juice just before serving.
Tips
- Fry the ginger until just golden, as it will continue to darken after removing it from the oil.
- Mash a few of the beans while simmering to create an even creamier sauce.
- Adjust the amount of chilli to suit your preferred level of heat.
