Ingredients

  • 8 Boneless, Skinless Chicken Thighs
  • 1 tablespoon Olive Oil
  • 4 Garlic Cloves, minced
  • 1 Small Onion, finely chopped
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Paprika
  • ½ teaspoon Chilli Flakes
  • 200ml Chicken Stock
  • 250ml Heavy Cream
  • 60g Sun-Dried Tomatoes, sliced
  • 50g Parmesan Cheese, grated
  • 80g Baby Spinach
  • Salt
  • Freshly Ground Black Pepper
  • Fresh Basil, chopped

Instructions

  1. Season the chicken thighs with salt, pepper and paprika.
  2. Heat the olive oil in a frying pan over medium-high heat and sear the chicken for 2–3 minutes per side until lightly browned.
  3. Transfer the chicken to the slow cooker.
  4. Add the onion, garlic, Italian seasoning, chilli flakes, chicken stock and sun-dried tomatoes.
  5. Cover and cook on LOW for 5–6 hours or on HIGH for 3–4 hours.
  6. Stir in the heavy cream and grated Parmesan cheese.
  7. Add the baby spinach and cook for another 10–15 minutes until wilted.
  8. Taste and adjust the seasoning if needed.
  9. Garnish with fresh basil before serving.
  10. Serve with mashed potatoes, rice, pasta or crusty bread.
