Creamy Tuscan Slow Cooker Chicken
Ingredients
- 8 Boneless, Skinless Chicken Thighs
- 1 tablespoon Olive Oil
- 4 Garlic Cloves, minced
- 1 Small Onion, finely chopped
- 1 teaspoon Italian Seasoning
- 1 teaspoon Paprika
- ½ teaspoon Chilli Flakes
- 200ml Chicken Stock
- 250ml Heavy Cream
- 60g Sun-Dried Tomatoes, sliced
- 50g Parmesan Cheese, grated
- 80g Baby Spinach
- Salt
- Freshly Ground Black Pepper
- Fresh Basil, chopped
Instructions
- Season the chicken thighs with salt, pepper and paprika.
- Heat the olive oil in a frying pan over medium-high heat and sear the chicken for 2–3 minutes per side until lightly browned.
- Transfer the chicken to the slow cooker.
- Add the onion, garlic, Italian seasoning, chilli flakes, chicken stock and sun-dried tomatoes.
- Cover and cook on LOW for 5–6 hours or on HIGH for 3–4 hours.
- Stir in the heavy cream and grated Parmesan cheese.
- Add the baby spinach and cook for another 10–15 minutes until wilted.
- Taste and adjust the seasoning if needed.
- Garnish with fresh basil before serving.
- Serve with mashed potatoes, rice, pasta or crusty bread.
