Ingredients
- 700g Boneless Skinless Chicken Thighs
- Salt
- Freshly Ground Black Pepper
- 1 tablespoon Olive Oil
- 4 Garlic Cloves, minced
- 80ml Honey
- 60ml Low-Sodium Soy Sauce
- 2 tablespoons Tomato Ketchup
- 1 tablespoon Apple Cider Vinegar
- 1 teaspoon Smoked Paprika
- 1 teaspoon Dried Thyme
- 1 tablespoon Cornflour
- 2 tablespoons Cold Water
- 2 Spring Onions, sliced

Instructions
- Season the chicken thighs with salt and freshly ground black pepper.
- Heat the olive oil in a large frying pan over medium-high heat and lightly brown the chicken on both sides for about 2 minutes per side. Transfer the chicken to the slow cooker.
- In a bowl, whisk together the garlic, honey, soy sauce, ketchup, apple cider vinegar, smoked paprika, and dried thyme until well combined.
- Pour the sauce over the chicken and gently turn the pieces to coat evenly.
- Cover and cook on LOW for 5–6 hours or on HIGH for 3–4 hours, until the chicken is tender and easy to shred.
- Remove the chicken and keep warm. Whisk together the cornflour and cold water, then stir the slurry into the sauce in the slow cooker.
- Cover and cook for another 10–15 minutes until the sauce thickens.
- Return the chicken to the slow cooker and coat it thoroughly in the glossy honey garlic sauce.
- Garnish with sliced spring onions and sesame seeds before serving.
