Chilli ginger lamb chops
Ingredients
- 4 Cloves Crushed Garlic
- 1 tblsp Ginger
- 1 tblsp Lemon Juice
- 1 tblsp Olive Oil
- 1/2 tsp Chili Powder
- 1 tsp Cumin
- 8 Lamb Loin Chops
Instructions
- Put the garlic, ginger, lemon juice, olive oil, chilli powder and cumin in a bowl, season well and blitz with a hand blender until smooth.
- Coat the lamb chops evenly with the marinade, cover and refrigerate for at least 2 hours or overnight.
- Heat a barbecue or grill until hot. Cook the chops for about 3 minutes on each side until well coloured on the outside and still pink and juicy in the centre.
- Remove from the heat and allow the lamb to rest briefly before serving.
Tips
- Marinate the chops for at least 2 hours, or overnight, to allow the ginger to tenderize the meat and the chilli to penetrate.
- Bring the lamb to room temperature before grilling to ensure even cooking and a juicy center.
- Use a high-heat sear to create a charred, caramelized crust while keeping the inside medium-rare.
Variations
- Yogurt Marinade: Mix the chilli and ginger into Greek yogurt for a creamier, Tandoori-style coating.
- Soy Glaze: Add a splash of soy sauce and honey to the marinade for a sticky, Asian-fusion finish.
Storage
Serving Suggestions
- Serve with a refreshing mint and cucumber raita to balance the heat.
- Pair with spiced potatoes or a simple turmeric rice.
