Sugar Pie
Ingredients
- 1 1/2 cups Brown Sugar
- 1/4 cup Butter
- 2 Eggs
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
- 1/4 cup Plain Flour
- 1 1/2 cups Milk
Instructions
- Preheat the oven to 175°C / 350°F. Grease a 9-inch pie dish with butter.
- In a large bowl, beat the brown sugar and softened butter together until smooth and completely lump-free. Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and salt. Gradually beat in the flour, then slowly add the milk, mixing until a smooth, creamy batter forms.
- Pour the filling into the prepared pie dish and level the surface.
- Bake for about 35 minutes. Remove the pie, cover the edges with foil to prevent over-browning, then return to the oven for a further 15 minutes, until the centre is set and a thin crust has formed on top.
- Allow the pie to cool to room temperature, then refrigerate for at least 1 hour before serving.
Tips
- Use heavy cream with at least 35% fat to ensure the filling sets into a rich, fudge-like consistency.
- Don’t overmix the sugar and cream; just stir until combined to avoid creating too many air bubbles.
- Allow the pie to cool completely at room temperature, then chill in the fridge; it must be cold to slice cleanly.
Variations
- Maple Sugar Pie: Substitute the brown sugar with maple sugar for a more intense, authentic Quebecois flavor.
- Vanilla Bean: Add the seeds of one vanilla bean to the cream for a more sophisticated aroma.
Storage
Serving Suggestions
- Serve in small slices as it is extremely rich and sweet.
- Accompany with a cup of strong, unsweetened coffee or tea.
