Sausage Ragù Pasta
Ingredients
- 300g Fresh Pasta (Maltagliati or Pappardelle)
- 400g Italian Pork Sausages
- 1 tablespoon Olive Oil
- 1 Small Onion
- 2 Garlic Cloves
- 1 Carrot
- 1 Celery Stalk
- 2 tablespoons Tomato Purée
- 150ml Dry White Wine
- 400g Chopped Tomatoes
- 200ml Beef Stock
- 1 teaspoon Dried Oregano
- 1 teaspoon Fresh Rosemary, finely chopped
- Salt
- Freshly Ground Black Pepper
- 50g Parmesan Cheese, grated
- Fresh Parsley, chopped
Instructions
- Bring a large pot of salted water to a boil for the pasta.
- Remove the sausage meat from the casings and discard the skins.
- Heat the olive oil in a large frying pan over medium-high heat. Add the sausage meat and cook until well browned, breaking it into small pieces with a wooden spoon.
- Add the onion, carrot and celery. Cook for 5–6 minutes until softened.
- Stir in the garlic and tomato purée and cook for another minute.
- Pour in the white wine and simmer until most of the liquid has evaporated.
- Add the chopped tomatoes, beef stock, oregano and rosemary. Stir well and simmer gently for 25 minutes until rich and thick.
- Meanwhile, cook the pasta according to the package instructions until al dente. Reserve a little pasta water before draining.
- Toss the pasta with the sausage ragù, adding a splash of reserved pasta water if needed.
- Serve topped with grated Parmesan and freshly chopped parsley.
Tips
- Remove the sausage meat from the casings and brown it in a hot pan, breaking it into very small crumbles.
- Add a splash of red wine and let it reduce completely to build a deep, rich foundation for the tomato sauce.
- Finish the pasta in the sauce with a ladle of pasta water to create a silky, emulsified coating.

- Creamy Ragu: Add a splash of heavy cream at the very end for a milder, more luxurious sauce.
