Hot Chocolate Fudge
Ingredients
- 2 cups Chocolate Chips
- 2 tbs Heavy Cream
- 400g Condensed Milk
- 1 tsp Vanilla Extract
- 1.5 cups White Chocolate Chips
- 1.5 cups Miniature Marshmallows
Instructions
- Line an 8-inch (20 cm) square baking pan with wax paper or foil, leaving an overhang, and lightly coat with non-stick spray or butter.
- In a microwave-safe bowl, combine the dark chocolate chips, heavy cream, and half of the sweetened condensed milk. Microwave in 20-second intervals, stirring well between each interval, until the chocolate is fully melted and smooth.
- Stir the vanilla extract into the melted dark chocolate mixture until well combined. Pour the mixture into the prepared pan and spread it into an even layer.
- In a separate microwave-safe bowl, combine the white chocolate chips with the remaining sweetened condensed milk. Microwave in 20-second intervals, stirring between each round, until melted and smooth.
- Spread the white chocolate mixture evenly over the dark chocolate layer.
- Sprinkle the miniature marshmallows over the top and gently press them into the surface.
- Refrigerate for at least 4 hours, or until the fudge is fully set.
- Remove the fudge from the pan using the paper overhang and carefully peel away the paper or foil.
- Cut the fudge into bite-sized pieces and serve.
Tips
- Use a candy thermometer to reach the ‘soft ball’ stage (112°C-115°C) for the perfect creamy texture.
- Do not stir the mixture once it starts boiling to avoid crystallization and a grainy finish.
- Fold in mini marshmallows at the very end so they don’t completely melt, mimicking a cup of hot cocoa.
Variations
- Peppermint: Add a few drops of peppermint extract and crushed candy canes on top.
- Mocha: Stir in a tablespoon of instant espresso powder to the chocolate base.
Storage
Serving Suggestions
