Griddled aubergines with sesame dressing
Ingredients
- 2 large Aubergine
- 2 tablespoons Olive Oil
- 250g Greek Yogurt
- 3 tablespoons Tahini Paste
- 1 clove peeled crushed Garlic
- Juice of 1 Lemon
- Handful Coriander
- Handful Parsley
- Handful Mint
Instructions
- Slice the aubergines lengthways and brush lightly with olive oil. Season well. Heat a griddle pan or barbecue until hot.
- Grill the aubergine slices for 2–3 minutes on each side until tender and nicely marked.
- In a bowl, mix the Greek yogurt with the tahini, garlic, lemon juice and chopped herbs. Season to taste.
- Spoon the sesame dressing over the warm aubergines and finish with extra fresh herbs if you like.
