Griddled aubergines with sesame dressing

Ingredients

  • 2 large Aubergine
  • 2 tablespoons Olive Oil
  • 250g Greek Yogurt
  • 3 tablespoons Tahini Paste
  • 1 clove peeled crushed Garlic
  • Juice of 1 Lemon
  • Handful Coriander
  • Handful Parsley
  • Handful Mint

Instructions

  1. Slice the aubergines lengthways and brush lightly with olive oil. Season well. Heat a griddle pan or barbecue until hot.
  2. Grill the aubergine slices for 2–3 minutes on each side until tender and nicely marked.
  3. In a bowl, mix the Greek yogurt with the tahini, garlic, lemon juice and chopped herbs. Season to taste.
  4. Spoon the sesame dressing over the warm aubergines and finish with extra fresh herbs if you like.
