Fruit and Cream Cheese Breakfast Pastries

Ingredients

  • 1 1/4 oz Cream Cheese
  • 1 1/4 cup Sugar
  • 1 teaspoon Vanilla Extract
  • Flour
  • 2 Puff Pastry
  • Strawberries
  • Raspberries
  • Blackberries

Instructions

  1. Preheat the oven to 400°F (200°C). Line two baking sheets with parchment paper. In a bowl, mix the cream cheese, sugar, and vanilla extract until smooth and fully combined.
  2. Lightly flour a work surface and roll out the puff pastry to even out the thickness. Cut each sheet into 9 equal squares. On each square, cut an L-shape in the top right and bottom left corners, about ½ inch (1 cm) from the edge, making sure the cuts do not meet at the ends so two corners remain intact.
  3. Take the top right corner of the pastry and fold it diagonally down toward the inner bottom corner to form a diamond shape with a framed edge.
  4. Spoon 1–2 teaspoons of the cream cheese filling into the centre of each pastry, then top with strawberries, raspberries, and blackberries.
  5. Repeat with the remaining pastry squares and place them onto the prepared baking sheets, leaving space between each pastry.
  6. Bake for 15–20 minutes, until the pastry is puffed and golden brown. Allow to cool slightly before serving.
