Fruit and Cream Cheese Breakfast Pastries

- 1 1/4 oz Cream Cheese
- 1 1/4 cup Sugar
- 1 teaspoon Vanilla Extract
- Flour
- 2 Puff Pastry
- Strawberries
- Raspberries
- Blackberries
Instructions
- Preheat the oven to 400°F (200°C). Line two baking sheets with parchment paper. In a bowl, mix the cream cheese, sugar, and vanilla extract until smooth and fully combined.
- Lightly flour a work surface and roll out the puff pastry to even out the thickness. Cut each sheet into 9 equal squares. On each square, cut an L-shape in the top right and bottom left corners, about ½ inch (1 cm) from the edge, making sure the cuts do not meet at the ends so two corners remain intact.
- Take the top right corner of the pastry and fold it diagonally down toward the inner bottom corner to form a diamond shape with a framed edge.
- Spoon 1–2 teaspoons of the cream cheese filling into the centre of each pastry, then top with strawberries, raspberries, and blackberries.
- Repeat with the remaining pastry squares and place them onto the prepared baking sheets, leaving space between each pastry.
- Bake for 15–20 minutes, until the pastry is puffed and golden brown. Allow to cool slightly before serving.
