Ingredients

  • 250g Plain Flour
  • 75g Cocoa Powder
  • 2 teaspoons Baking Powder
  • 1 teaspoon Bicarbonate of Soda
  • 300g Caster Sugar
  • 3 Large Eggs
  • 240ml Whole Milk
  • 120ml Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 240ml Hot Coffee
  • 250g Unsalted Butter, softened
  • 450g Dark Chocolate, melted and cooled
  • 350g Icing Sugar
  • 3 tablespoons Double Cream

Instructions

  1. Preheat the oven to 180°C (160°C fan) and grease two 20cm round cake tins.
  2. Whisk together the flour, cocoa powder, baking powder and bicarbonate of soda.
  3. In another bowl, beat the sugar, eggs, milk, vegetable oil and vanilla until smooth.
  4. Gradually mix the dry ingredients into the wet mixture.
  5. Slowly stir in the hot coffee until the batter is smooth and glossy.
  6. Divide the batter evenly between the prepared tins.
  7. Bake for 30–35 minutes until a skewer inserted into the centre comes out clean.
  8. Leave the cakes to cool for 10 minutes before transferring them to a wire rack to cool completely.
  9. Beat the butter until creamy, then gradually mix in the icing sugar.
  10. Add the melted chocolate and double cream, beating until smooth and fluffy.
  11. Sandwich the cakes with half the frosting and spread the remaining frosting over the top and sides.
