Banana Cake
Ingredients
- 250g Plain Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Bicarbonate of Soda
- ½ teaspoon Salt
- 150g Unsalted Butter, softened
- 180g Light Brown Sugar
- 2 Large Eggs
- 3 Ripe Bananas, mashed
- 1 teaspoon Vanilla Extract
- 120ml Sour Cream
- 250g Full-Fat Cream Cheese, softened
- 100g Unsalted Butter, softened (for the frosting)
- 250g Icing Sugar
Instructions
- Preheat the oven to 180°C (160°C fan) and grease and line a 23cm round cake tin.
- Whisk together the flour, baking powder, bicarbonate of soda and salt.
- Beat the butter and brown sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the mashed bananas, vanilla extract and sour cream until combined.
- Fold the dry ingredients into the wet mixture until no streaks of flour remain.
- Pour the batter into the prepared tin and smooth the top.
- Bake for 40–45 minutes until golden and a skewer inserted into the centre comes out clean.
- Leave the cake to cool in the tin for 15 minutes before transferring it to a wire rack to cool completely.
- Beat the cream cheese, butter and icing sugar together until smooth and creamy.
- Spread the frosting over the cooled cake before slicing and serving.

- Use very ripe bananas with brown spots for the sweetest flavour and moistest texture.
- Do not overmix the batter once the flour is added to keep the cake tender.
- Allow the cake to cool completely before adding the cream cheese frosting.
