Ingredients

  • 500g Turkey Mince
  • 2 Spring Onions, finely sliced
  • 2 Garlic Cloves, finely grated
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Dried Oregano
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Olive Oil
  • 1 Large Avocado, sliced
  • 2 Tomatoes, sliced
  • 1 Small Red Onion, thinly sliced
  • 8 Large Crisp Lettuce Leaves
  • 100g Greek Yogurt
  • 1 tablespoon Mayonnaise
  • 1 Lime
  • 1 teaspoon Hot Sauce
  • 10g Fresh Coriander, roughly chopped
  • Sea Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Put the turkey mince in a large bowl with the spring onions, garlic, smoked paprika, cumin, oregano, Worcestershire sauce, salt, and black pepper.
  2. Mix gently until the seasonings are evenly distributed, taking care not to overwork the meat.
  3. Divide the mixture into four equal portions and shape each one into a burger about 2cm thick.
  4. Heat the olive oil in a large non-stick frying pan over medium-high heat.
  5. Add the turkey burgers and cook for 5–6 minutes on the first side until well browned.
  6. Turn the burgers and cook for another 5–6 minutes until golden and completely cooked through.
  7. Meanwhile, mix the Greek yogurt, mayonnaise, finely grated zest and juice of half the lime, and hot sauce in a small bowl. Season with a little salt and black pepper.
  8. Wash and thoroughly dry the lettuce leaves, choosing the largest and strongest leaves for wrapping the burgers.
  9. Place two overlapping lettuce leaves on each serving plate and top with a cooked turkey burger.
  10. Add the sliced tomato, avocado, and red onion.
  11. Spoon over the creamy lime sauce and scatter with fresh coriander.
  12. Fold the lettuce around the filling and serve immediately with the remaining lime cut into wedges.

Tips

  • Mix the turkey mince only until the ingredients are combined, as overworking it can make the burgers dense.
  • Choose large, crisp lettuce leaves and dry them thoroughly so they hold the burger and toppings without tearing.
  • Turkey should be cooked completely through. Check the thickest part of each burger before serving.

Variations

  • Spicy Turkey Lettuce Wraps: Add a finely chopped jalapeño to the turkey mixture and increase the hot sauce in the lime dressing.
  • Turkey Cheeseburger Lettuce Wraps: Top each burger with a slice of Cheddar during the final minute of cooking and cover the pan briefly until melted.

Storage

Store cooked turkey burgers in an airtight container in the refrigerator for up to 3 days. Keep the lettuce, vegetables, and sauce separately refrigerated and assemble the wraps shortly before serving. The cooked burgers can be frozen for up to 2 months.

Serving Suggestions

  • Serve with roasted sweet potato wedges or a crisp cabbage slaw for a more substantial meal.
  • Add extra avocado, lime wedges, and hot sauce at the table so everyone can customise their lettuce wraps.

Frequently Asked Questions

What lettuce is best for turkey burger wraps?

Large, sturdy leaves such as iceberg, romaine, or butter lettuce work well. Use two overlapping leaves if they are too small to hold the burger comfortably.

How do I keep turkey burgers juicy?

Avoid overmixing the mince and cook the burgers only until they are safely cooked through. The onion and seasonings also help keep the mixture flavourful and moist.

Can I make turkey burger lettuce wraps ahead of time?

The burgers and sauce can be prepared ahead, but keep the lettuce and fresh toppings separate and assemble the wraps just before serving.
