Toad In The Hole
Ingredients
- 8 sausages
- 3 tbsp vegetable oil
- 100g plain flour
- 2 medium eggs
- 1 tbsp grated horseradish
- 225ml milk
- 200g cherry tomatoes
Instructions
- Preheat the oven to 200°C / 180°C fan / Gas mark 6. Brown the sausages in a non-stick frying pan until evenly coloured, then remove from the heat.
- Drizzle the vegetable oil into a deep roasting tray (about 30 x 25 x 6 cm) and place it in the oven for a few minutes until the oil is hot.
- In a bowl, combine the plain flour and eggs, then stir in the grated horseradish. Gradually whisk in the milk until smooth and season to taste.
- Carefully remove the hot tray from the oven, arrange the sausages inside and immediately pour over the batter. Scatter the cherry tomatoes on top.
- Return to the oven and bake for about 30 minutes, until the batter is puffed and golden.
Tips
- The oil in the pan must be ‘smoking hot’ before you pour in the batter to ensure it rises instantly.
- Do not open the oven door during the first 20 minutes of baking, or the batter will collapse.
- Rest the batter for at least 30 minutes at room temperature before cooking to allow the gluten to relax.
