Toad In The Hole

Ingredients

  • 8 sausages
  • 3 tbsp vegetable oil
  • 100g plain flour
  • 2 medium eggs
  • 1 tbsp grated horseradish
  • 225ml milk
  • 200g cherry tomatoes

Instructions

  1. Preheat the oven to 200°C / 180°C fan / Gas mark 6. Brown the sausages in a non-stick frying pan until evenly coloured, then remove from the heat.
  2. Drizzle the vegetable oil into a deep roasting tray (about 30 x 25 x 6 cm) and place it in the oven for a few minutes until the oil is hot.
  3. In a bowl, combine the plain flour and eggs, then stir in the grated horseradish. Gradually whisk in the milk until smooth and season to taste.
  4. Carefully remove the hot tray from the oven, arrange the sausages inside and immediately pour over the batter. Scatter the cherry tomatoes on top.
  5. Return to the oven and bake for about 30 minutes, until the batter is puffed and golden.
