Spicy Pork Noodles

Ingredients

  • 300g Egg Noodles
  • 400g Ground Pork
  • 2 tablespoons Vegetable Oil
  • 3 Garlic Cloves, minced
  • 1 tablespoon Fresh Ginger, grated
  • 2 Spring Onions, sliced
  • 1 Red Chilli, finely sliced
  • 1 Red Bell Pepper, thinly sliced
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Dark Soy Sauce
  • 1 tablespoon Oyster Sauce
  • 1 tablespoon Sriracha
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Brown Sugar
  • 1 tablespoon Rice Vinegar
  • Sesame Seeds
  • Fresh Coriander, chopped

Instructions

  1. Cook the egg noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large wok or frying pan over high heat.
  3. Add the ground pork and cook until browned, breaking it into small pieces.
  4. Stir in the garlic, ginger and chilli. Cook for 1 minute until fragrant.
  5. Add the sliced bell pepper and cook for 2–3 minutes.
  6. In a small bowl, mix the soy sauce, dark soy sauce, oyster sauce, sriracha, sesame oil, brown sugar and rice vinegar.
  7. Pour the sauce into the pan and stir well.
  8. Add the cooked noodles and toss until evenly coated.
  9. Stir in most of the spring onions.
  10. Garnish with the remaining spring onions, sesame seeds and fresh coriander before serving.

Tips

  • Mince the pork very finely or use ground pork, and fry it until it is brown and slightly crispy for the best texture.
  • Whip together your sauce ingredients (soy, vinegar, chili oil, peanut butter) before adding them to the pan to ensure an even coating.
  • Add a splash of noodle cooking water to the pan to help the sauce emulsify and stick to the noodles.
