Migas

Ingredients

  • 1 large Bread
  • 1 1/2 L Olive Oil
  • Half Garlic
  • 1 Handfull Pork

Instructions

  1. Crumble the bread into small pieces and place in a large bowl. Lightly sprinkle with cold water, mix gently, cover with a damp cloth and leave for about 30 minutes so the bread absorbs the moisture evenly.
  2. Heat a little olive oil in a deep frying pan over medium heat. Lightly score the unpeeled garlic cloves, add them to the oil and cook for about 5 minutes until fragrant. Remove the garlic and set aside.
  3. Add the prepared bread to the same pan and cook, stirring constantly, for around 15 minutes until the crumbs are heated through and beginning to dry. Season with freshly ground black pepper.
  4. Return the garlic to the pan, add the pork pieces and continue cooking for about 20 minutes, stirring regularly, until the bread is soft inside and evenly golden. Serve hot.
