Ingredients

  • 4 Flatbreads
  • 300g Cottage Cheese
  • 2 Medium Courgettes, thinly sliced lengthways
  • 250g Cherry Tomatoes
  • 2 Red Onions, thinly sliced
  • 3 tablespoons Olive Oil
  • 1 Garlic Clove, finely grated
  • 1 Lemon
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Chilli Flakes
  • 15g Fresh Mint Leaves, roughly chopped
  • 15g Fresh Parsley, roughly chopped
  • 30g Toasted Pumpkin Seeds
  • Sea Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Preheat the oven to 200°C.
  2. Put the sliced red onions in a frying pan with 1 tablespoon of the olive oil and a pinch of salt. Cook over medium heat for 8–10 minutes, stirring regularly, until soft and golden at the edges.
  3. Add the cumin and chilli flakes to the onions and cook for another minute, then remove from the heat.
  4. Heat a large griddle pan or frying pan over high heat. Toss the courgette slices with 1 tablespoon of olive oil and season with salt and black pepper.
  5. Cook the courgettes in batches for 2–3 minutes on each side until tender and blistered. Transfer to a plate.
  6. Add the cherry tomatoes to the hot pan and cook for 4–5 minutes, turning occasionally, until softened and lightly blistered.
  7. Mix the cottage cheese with the grated garlic, finely grated zest of half the lemon, a squeeze of lemon juice, and a little black pepper.
  8. Place the flatbreads on a baking tray and warm them in the oven for 3–4 minutes.
  9. Spread each warm flatbread generously with the seasoned cottage cheese.
  10. Top with the blistered courgettes and tomatoes, then spoon over the sizzled onions.
  11. Scatter with the mint, parsley, and toasted pumpkin seeds.
  12. Drizzle with the remaining olive oil and finish with an extra squeeze of lemon juice before serving.

Tips

  • Cook the courgettes in batches so the pan stays hot enough to blister them rather than steam them.
  • Drain any excess liquid from the cottage cheese before seasoning it if it is particularly wet.
  • Warm the flatbreads just before assembling so they remain soft while the vegetable toppings stay freshly cooked.

Variations

  • Goat’s Cheese Courgette Flatbreads: Replace the cottage cheese with soft goat’s cheese loosened with a spoonful of natural yogurt.
  • Roasted Pepper Flatbreads: Add sliced roasted red peppers alongside the courgettes and tomatoes for a sweeter vegetable topping.

Storage

The cooked courgettes, tomatoes, and onions can be refrigerated separately in airtight containers for up to 2 days. Keep the cottage cheese chilled and assemble the flatbreads shortly before serving. Reheat the flatbreads and vegetables separately for the best texture.

Serving Suggestions

  • Serve with a crisp green salad dressed with lemon and olive oil for a light lunch.
  • Cut the loaded flatbreads into smaller pieces and serve as part of a sharing spread with hummus and other vegetable dishes.

Frequently Asked Questions

Can I make loaded courgette flatbreads ahead of time?

The vegetable toppings can be prepared ahead and refrigerated, but the flatbreads are best warmed and assembled just before serving.

How do I stop courgettes becoming soggy?

Use a very hot pan, cook the courgettes in batches, and avoid overcrowding so they blister quickly instead of releasing too much moisture.

Can I use another cheese instead of cottage cheese?

Yes. Ricotta, whipped feta, or soft goat’s cheese all work well, although each will give the flatbreads a slightly different flavour and texture.
