Instructions
- Begin by preparing the dough. Dissolve the yeast in warm water in a large mixing bowl and let it stand for a few minutes until activated. Add the milk, sugar, salt, eggs, and shortening. Add part of the flour and beat on low speed for about 30 seconds, scraping down the sides of the bowl. Increase to medium speed and beat for about 2 minutes until the mixture is smooth.
- Gradually add the remaining flour, mixing until a soft, smooth dough forms. Cover the bowl and let the dough rise in a warm place for 50–60 minutes, or until doubled in size. The dough is ready when an indentation remains after gently pressing it with a finger.
- Turn the dough out onto a lightly floured surface and gently coat it with flour. Roll it out to about ½ inch (1–1.5 cm) thickness and cut out donut shapes using a donut cutter or round cutters. Cover the donuts and let them rise again for 30–40 minutes, until doubled.
- Heat the vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Carefully slide the donuts into the hot oil using a wide spatula or slotted spoon. Fry, turning as they rise to the surface, until golden brown, about 1 minute per side. Remove carefully and let drain.
- To make the glaze, melt the butter and remove from the heat. Stir in the powdered sugar and vanilla until smooth. Add the boiling water, one tablespoon at a time, until the glaze reaches the desired consistency.
- Dip the warm donuts into the glaze and place them on a rack to allow excess glaze to drip off. Serve once the glaze has set slightly.
