Kentucky Fried Chicken

Ingredients

  • 1 whole Chicken
  • 2 quarts neutral frying Oil
  • 1 Egg White
  • 1 1/2 cups Flour
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Salt
  • 1 tablespoon paprika
  • 2 teaspoons onion salt
  • 1 teaspoon chili powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon sage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon allspice
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon marjoram

Instructions

  1. Begin by preparing the chicken. Cut the whole chicken into serving pieces, including breasts, wings, thighs, and drumsticks. Pat all pieces dry with paper towels and set aside.
  2. Preheat a deep fryer or large heavy pot filled with neutral oil to 350°F (175°C). Ensure there is enough oil to fully submerge the chicken during frying.
  3. In a large bowl, thoroughly mix the spices - paprika, onion salt, chili powder, black pepper, celery salt, sage, garlic powder, allspice, oregano, basil, and marjoram. Add the flour, brown sugar, and salt, and mix until evenly combined.
  4. In a separate bowl, lightly whisk the egg white until smooth. Dip each piece of chicken into the egg white to lightly coat it, then dredge thoroughly in the seasoned flour mixture, pressing the coating onto the chicken so it adheres well.
  5. Place the coated chicken pieces on a tray or rack and let them rest for about 5 minutes. This helps the coating dry slightly and stick better during frying.
  6. Fry the chicken in batches, avoiding overcrowding. Cook breasts and wings for about 12–14 minutes, and thighs and drumsticks for a few minutes longer. The chicken is done when a thermometer inserted into the thickest part registers 165°F (74°C).
  7. Remove the chicken from the oil and let it drain on paper towels. Serve hot.
