Ingredients
- 1 Egg
- 1 cup Butter
- 1 cup Sugar
- 1/2 cup Molasses

Instructions
- Preheat the oven to 350°F / 180°C and line a large baking tray with parchment paper.

- Portion the dough into small balls, place them on the prepared tray and flatten gently using a floured glass or the palm of your hand.
- Bake for 10–12 minutes, until the cookies are set around the edges. Remove from the oven and allow to cool for at least 10 minutes.
- Once completely cooled, sandwich the cookies together with at least two teaspoons of jam between each pair. Serve and enjoy.
