Jam jam cookies
Ingredients
- 1 Egg
- 1 cup Butter
- 1 cup Sugar
- 1/2 cup Molasses
- 1 tsp Vanilla
- 2 tsp Baking Powder
- 3 tablespoons Water
- 1 tsp Cinnamon
- 2 tsp Salt
- 4 cups Flour
- 2 cups Jam
Instructions
- Preheat the oven to 350°F / 180°C and line a large baking tray with parchment paper.
- In a stand mixer fitted with the paddle attachment, cream the butter with the sugar and egg until smooth. Add the molasses and vanilla extract and mix until fully incorporated.
- Mix the water with the baking powder, then add this to the batter and beat again until combined.
- In a separate bowl, combine the flour, cinnamon, salt and baking powder. Add the dry ingredients to the wet mixture gradually, mixing on low speed and scraping down the bowl as needed. The dough should be soft and easy to shape.
- Portion the dough into small balls, place them on the prepared tray and flatten gently using a floured glass or the palm of your hand.
- Bake for 10–12 minutes, until the cookies are set around the edges. Remove from the oven and allow to cool for at least 10 minutes.
- Once completely cooled, sandwich the cookies together with at least two teaspoons of jam between each pair. Serve and enjoy.
