Hummus
Ingredients
- 400g Chickpeas
- 1 tablespoon Tahini Paste
- 1 large Garlic Clove
- 3 tablespoons Greek Yogurt
- Juice of half Lemon
Instructions
- Prepare the chickpeas in advance. If using canned chickpeas, rinse and drain them thoroughly. Removing the skins is optional but helps achieve a smoother texture.
- Place the chickpeas, tahini, freshly squeezed lemon juice, and peeled garlic into a blender and process until combined.
- With the blender running, add the olive oil and salt, continuing to blend.
- Gradually pour in cold water a little at a time until the mixture becomes smooth, creamy, and light in texture.
- Taste the hummus and adjust the seasoning with additional salt or lemon juice if needed. Add more water if the consistency is too thick.
- Transfer the hummus to a serving bowl, smooth the surface, drizzle with olive oil, and garnish with spices if desired.
