Hummus

Ingredients

  • 400g Chickpeas
  • 1 tablespoon Tahini Paste
  • 1 large Garlic Clove
  • 3 tablespoons Greek Yogurt
  • Juice of half Lemon

Instructions

  1. Prepare the chickpeas in advance. If using canned chickpeas, rinse and drain them thoroughly. Removing the skins is optional but helps achieve a smoother texture.
  2. Place the chickpeas, tahini, freshly squeezed lemon juice, and peeled garlic into a blender and process until combined.
  3. With the blender running, add the olive oil and salt, continuing to blend.
  4. Gradually pour in cold water a little at a time until the mixture becomes smooth, creamy, and light in texture.
  5. Taste the hummus and adjust the seasoning with additional salt or lemon juice if needed. Add more water if the consistency is too thick.
  6. Transfer the hummus to a serving bowl, smooth the surface, drizzle with olive oil, and garnish with spices if desired.
