Garlicky prawns with sherry

Ingredients

  • 3 tablespoons Olive Oil
  • 3 cloves Chopped Garlic
  • 400g Prawns
  • 2 tbsp Dry sherry
  • Handful Parsley

Instructions

  1. Peel and devein the prawns if necessary. Finely chop the parsley and set aside.
  2. Heat the olive oil in a large frying pan over medium heat. Add the garlic and cook for a few seconds until fragrant and lightly golden, taking care not to brown it.
  3. Add the prawns to the pan and stir to coat them in the oil. Cook for 1–2 minutes until they start to turn pink.
  4. Pour in the dry sherry and cook for a few minutes more, until the liquid has reduced slightly and the prawns are just cooked through.
  5. Remove from the heat, sprinkle with the chopped parsley and serve immediately.
