Garlicky prawns with sherry
Ingredients
- 3 tablespoons Olive Oil
- 3 cloves Chopped Garlic
- 400g Prawns
- 2 tbsp Dry sherry
- Handful Parsley
Instructions
- Peel and devein the prawns if necessary. Finely chop the parsley and set aside.
- Heat the olive oil in a large frying pan over medium heat. Add the garlic and cook for a few seconds until fragrant and lightly golden, taking care not to brown it.
- Add the prawns to the pan and stir to coat them in the oil. Cook for 1–2 minutes until they start to turn pink.
- Pour in the dry sherry and cook for a few minutes more, until the liquid has reduced slightly and the prawns are just cooked through.
- Remove from the heat, sprinkle with the chopped parsley and serve immediately.
