Garlic Goat's Cheese Toast
Ingredients
- 2 Whole Garlic Bulbs
- 2 tablespoons Olive Oil
- Salt
- Freshly Ground Black Pepper
- 200g Soft Goat's Cheese
- 2 tablespoons Greek Yogurt
- 1 teaspoon Lemon Zest
- 1 teaspoon Lemon Juice
- 4 Thick Slices Sourdough Bread
- 1 tablespoon Honey
- Fresh Thyme Leaves
- Cracked Black Pepper
- Flaky Sea Salt
Instructions
- Preheat the oven to 180°C (160°C fan).
- Slice the tops off the garlic bulbs. Drizzle with olive oil, season lightly with salt and black pepper, wrap in foil and roast for 40–45 minutes until soft and caramelised.
- Allow the garlic to cool slightly, then squeeze the roasted cloves into a bowl.
- In another bowl, whisk together the goat's cheese, Greek yogurt, lemon zest and lemon juice until smooth and creamy.
- Toast the sourdough slices until crisp and golden.
- Spread a generous layer of whipped goat's cheese over each slice of toast.
- Spoon the roasted garlic evenly over the cheese and gently spread it with the back of a spoon.
- Finish with a drizzle of honey, fresh thyme leaves, cracked black pepper and a pinch of flaky sea salt.
