Full English Breakfast

Ingredients

  • 4 Sausages
  • 4 Bacon
  • 4 Mushrooms
  • 3 Tomatoes
  • 2 sliced Black Pudding
  • 2 Eggs
  • 1 Slice Bread
  • 100g Baked Beans

Instructions

  1. Heat a large flat griddle or frying plate over low heat, ideally spanning two burners, and lightly brush with olive oil.
  2. Start with the sausages, placing them on the coolest part of the griddle. Cook gently for 15–20 minutes, turning regularly, until evenly golden and cooked through. After about 10 minutes, increase the heat to medium and begin cooking the remaining ingredients. If space is limited, keep cooked sausages warm in a low oven.
  3. Make a few shallow cuts along the fatty edge of the bacon to prevent curling. Place on the griddle and fry for 2–4 minutes on each side until cooked to your preferred crispness. Keep warm if necessary.
  4. Brush any dirt from the mushrooms and trim the stalks level with the caps. Season with salt and pepper and drizzle lightly with olive oil. Place stalk-side up on the griddle and cook for 1–2 minutes, then turn and cook for a further 3–4 minutes. Avoid moving them too much to keep them firm.
  5. Cut the tomatoes in half across the centre (or lengthways if using plum tomatoes) and remove the green core. Season and drizzle lightly with oil. Place cut-side down on the griddle and cook undisturbed for about 2 minutes. Turn gently, season again, and cook for a further 2–3 minutes until tender but still holding their shape.
  6. Slice the black pudding into pieces about 1 cm thick, remove the skin, and cook for 1½–2 minutes on each side until lightly crisp.
  7. For traditional fried bread, use a separate frying pan. Heat to medium, add enough oil to coat the base, and fry the bread for 2–3 minutes per side until golden. Add more oil if needed. For extra richness, add a knob of butter after turning.
  8. Crack the eggs into the pan with the fried bread and leave for about 30 seconds. Add a knob of butter and gently baste the eggs with the melted butter. Cook to your liking, season, and carefully remove.
  9. Serve all components immediately on warm plates, with tomato ketchup or brown sauce if desired.
