Falafel

Ingredients

  • 2 tablespoons Sunflower Oil
  • 1 chopped Onion
  • 1 clove peeled crushed Garlic
  • 400g Chickpeas
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • Handful Parsley
  • 1 beaten Egg

Instructions

  1. Heat 1 tablespoon of sunflower oil in a large frying pan over low heat. Add the onion and garlic and cook for about 5 minutes until softened but not coloured.
  2. Transfer to a large bowl with the chickpeas, ground cumin and coriander. Mash with a fork or potato masher until the chickpeas are fully broken down and the mixture is coarse.
  3. Stir in the parsley and season to taste. Add the beaten egg and mix well with your hands until the mixture comes together.
  4. Shape the mixture into 6 balls, then flatten them into patties.
  5. Heat the remaining oil in the pan over medium heat and fry the falafels for about 3 minutes on each side until golden brown and firm.
  6. Serve hot or cold with couscous, pitta bread or salad.
