Ingredients

  • 12 Chicken Wings
  • 2 cloves minced Garlic
  • Zest and juice of 1 Lemon
  • 1 tsp Cumin Seeds
  • 2 tablespoons Olive Oil
  • 1 tablespoon Honey

Instructions

  1. Using sharp kitchen scissors, cut each chicken wing at the joint into two pieces. In a bowl, mix the garlic, lemon zest and juice, cumin seeds and olive oil, seasoning well.
  2. Add the chicken wings to the marinade and toss until evenly coated. Cover and refrigerate for at least 1 hour, or overnight if time allows.
  3. Heat the oven to 200°C (180°C fan) or prepare a barbecue. Arrange the wings in a single layer on a baking tray and roast for 45–50 minutes until crisp, turning occasionally. If barbecuing, cook for about 20 minutes, turning regularly.
  4. During the final 10 minutes of cooking, drizzle the wings with the honey to glaze. Transfer to a serving platter and serve hot.

Tips

  • Pat the wings completely dry with paper towels before seasoning to ensure the skin gets maximum crispness.
  • Toss the wings in a little baking powder before cooking for an extra-crunchy ‘fried’ texture in the oven.
  • Add the fresh garlic and lemon juice at the very end of cooking to keep the flavors bright and sharp.

Variations

  • Spicy Cumin: Add a teaspoon of crushed red pepper flakes or cayenne to the dry rub.
  • Honey Glaze: Stir a tablespoon of honey into the lemon-garlic mix for a sweet and savory finish.

Storage

Best served immediately. Leftovers can be refrigerated for 3 days and are best reheated in an air fryer or oven to regain their crunch.

Serving Suggestions

  • Serve as an appetizer with a side of creamy tahini dip or Greek yogurt.
  • Pair with a cold beer and plenty of napkins.

Frequently Asked Questions

Can I grill these instead of baking?

Yes, the cumin and garlic flavors work beautifully over charcoal. Grill over medium-high heat until the skin is charred.

Why use cumin with lemon?

It is a classic Mediterranean and Middle Eastern pairing where the earthy spice of cumin balances the citrusy acid of lemon.

How long do they take in an air fryer?

Usually about 18–22 minutes at 200°C, shaking the basket halfway through.
