Cheese Onion Pie
Ingredients
- 1 Ready-Rolled Shortcrust Pastry Sheet
- 2 tablespoons Butter
- 3 Large Onions, thinly sliced
- 1 tablespoon Plain Flour
- 150ml Whole Milk
- 200g Mature Cheddar Cheese, grated
- 1 teaspoon English Mustard
- 1 tablespoon Fresh Chives, finely chopped
- 1 Ready-Rolled Puff Pastry Sheet
- 1 Egg, beaten
- Sea Salt
- Freshly Ground Black Pepper
Instructions
- Preheat the oven to 200°C (180°C fan). Line a 23cm pie dish with the shortcrust pastry, trim the edges and chill while preparing the filling.
- Melt the butter in a large frying pan over medium-low heat. Add the sliced onions and cook gently for 18–20 minutes, stirring occasionally, until soft, sweet and lightly golden.
- Sprinkle the flour over the onions and cook for 1 minute. Gradually stir in the milk until smooth. Remove from the heat and mix in the grated Cheddar, English mustard and chives. Season with salt and black pepper, then allow the filling to cool slightly.
- Spoon the cheese and onion filling into the prepared pastry case.
- Cover with the puff pastry, trim any excess and press the edges firmly to seal. Cut a small steam vent in the centre and brush the top with beaten egg.
- Bake for 30–35 minutes until the pastry is crisp and deeply golden and the filling is bubbling. Leave to rest for 10 minutes before slicing.
