Bread omelette

Ingredients

  • 2 slices white bread
  • 2 eggs
  • 1 small onion, finely chopped
  • 1 green chilli, finely chopped (optional)
  • 2 tbsp vegetable oil
  • salt, to taste
  • freshly ground black pepper, to taste

Instructions

  1. Tear or cut the bread slices into small pieces and set aside.
  2. Crack the eggs into a bowl, add salt and freshly ground black pepper, and whisk until well combined. Stir in the finely chopped onion and green chilli.
  3. Heat the vegetable oil in a frying pan over medium heat until hot but not smoking.
  4. Pour the egg mixture into the pan and allow it to set for 20–30 seconds. While the base is still soft, scatter the bread pieces evenly over the omelette, gently pressing them into the eggs with a spatula.
  5. Cook for 1–2 minutes until the underside is lightly golden. Carefully flip the omelette and cook for a further 1–2 minutes, until the bread is lightly crisp and the eggs are fully cooked.
  6. Remove from the pan, cut into portions if desired, and serve hot with ketchup or a spicy sauce.
