Ingredients
- 1/2 cup Water
- 2 parts Yeast
- 1/2 cup Sugar
- 1/2 cup Milk
- 6 tblsp Butter
- 2 Eggs
- 1 ½ tsp Salt
- 2-1/2 cups Flour
- for frying Oil
- garnish Lemon
- garnish Cinnamon

Instructions
- In the bowl of a stand mixer, combine the warm water, a small pinch of sugar and the yeast. Leave to stand for a few minutes until foamy.
- Add the sugar, warm milk, melted butter, eggs and salt to the same bowl and mix until well combined.
- Fit the dough hook and gradually add the flour with the mixer running, mixing until a smooth but slightly sticky dough forms.
- Transfer the dough to a clean bowl, cover with plastic wrap and leave to rise for about 1½ hours, until doubled in size.
- Divide the dough into 12 portions and roll each one into a long oval shape about ¼ inch thick.
- Heat oil in a deep pot to frying temperature. Carefully lower the dough pieces into the hot oil and cook for 30–45 seconds on each side, until golden brown.
- Drain on paper towels and finish with toppings as desired, such as cinnamon sugar, sugar with a squeeze of lemon, or other sweet garnishes.
