Ingredients

  • 1/2 cup Water
  • 2 parts Yeast
  • 1/2 cup Sugar
  • 1/2 cup Milk
  • 6 tblsp Butter
  • 2 Eggs
  • 1 ½ tsp Salt
  • 2-1/2 cups Flour
  • for frying Oil
  • garnish Lemon
  • garnish Cinnamon

Instructions

  1. In the bowl of a stand mixer, combine the warm water, a small pinch of sugar and the yeast. Leave to stand for a few minutes until foamy.
  2. Add the sugar, warm milk, melted butter, eggs and salt to the same bowl and mix until well combined.
  3. Fit the dough hook and gradually add the flour with the mixer running, mixing until a smooth but slightly sticky dough forms.
  4. Transfer the dough to a clean bowl, cover with plastic wrap and leave to rise for about 1½ hours, until doubled in size.
  5. Divide the dough into 12 portions and roll each one into a long oval shape about ¼ inch thick.
  6. Heat oil in a deep pot to frying temperature. Carefully lower the dough pieces into the hot oil and cook for 30–45 seconds on each side, until golden brown.
  7. Drain on paper towels and finish with toppings as desired, such as cinnamon sugar, sugar with a squeeze of lemon, or other sweet garnishes.
